BROCCOLI CASHEW STIR FRY WITH BROWN RICE

A classic dish with a healthy twist!



This easy dish combines sweet, garlicky sautéed broccoli, cashews, and protien. I love that this dish is completely customizable with the addition of chicken, stout blocks of seared tofu, or hearty chickpeas. You can sub in whatever base you like: rice, quinoa, or cauliflower rice!


BROCCOLI CASHEW STIR FRY WITH BROWN RICE Serves 4

1 tablespoon coconut oil 1 small onion, chopped 2 bell peppers,chopped 1 garlic clove, chopped 1 teaspoon ginger powder 1 teaspoon cinnamon 1 teaspoon turmeric 2 bunches broccoli, chopped sea salt and black pepper, to taste ¼ cup water 1 cup cashews 4 cups cooked brown rice Protein Option : can of chick beans, drained and rinsed or 1 pre-roasted chicken


Instructions: 1. Add coconut oil to a large pan over medium heat. Once the oil has melted, add onion, bell peppers, and garlic. 2. Sauté for about 3 minutes, then add ginger,cinnamon, and turmeric. 3. Sauté For about a minute, then add broccoli. Season with sea salt and black pepper. Toss until everything is evenly distributed. Add water to the pan and cover. Let it steam for about 3 to 5 minutes until tender. 4. Remove the pan from heat, then stir in cashews. 5. Mix in optional protein, if desired. 6. Serve over cooked brown rice, quinoa, cauliflower rice, or even alongside a Big Salad.
