Farmers Market Breakfast Bake

Start your morning with this veggielicious breakfast frittata. It is high protein and packed with nutrient dense veggies.The cottage cheese makes this frittata creamy and cheesy without the quilt. Serve this simple healthy meal for brunch or a quick weekday lunch.

Servings: 6 servings


1 cup yellow squash, diced

I cup zucchini, diced

¼ cup vidalia onion, diced

I medium tomato, chopped

½ cup low-fat cottage cheese

4 eggs

1 egg white

¼ cup shredded organic Gouda cheese

1 tbsp olive oil

1 tsp salt

1 tsp pepper

1. Preheat the oven to 350 degrees. Spray pie dish with cooking spray.

2. Sauté onions and squash in olive oil.

3. Whisk the eggs. Stir in cottage cheese, sautéed veggies, tomato, and gouda cheese. Season with salt and pepper.

4. Pour the egg mixture into the pie dish. Bake for 20-25 minutes until eggs are puffed up and cooked through.
